TRACEABILITY OF FOOD PRODUCTION CHAIN

The opening of new markets has enlarged the product exchanges and at the same time has introduced new risks and food alerts which have strongly influenced the public opinion.
The EU has played an important role in the program of food safety established by the issuing of the new Regulation n. 178 of 28th January 2002, in force from 2005.

This new regulation represents the first step to guarantee a high level of human health safety and of consumer interests: it considers the different offer of foodstuffs included the traditional products. It establishes the common principles, the competences, the procedures and the organizing mechanisms necessary in the field of safety of food and feed during the production, the transformation and the distribution.

The food safety assumes that all information are traceable in:
  • foodstuffs, feedstuffs, animal destined to food production and any other substance present in food in any process phase (production – transformation – distribution)
  • suppliers of food, feedstuffs, animals destined to food production
  • final customers

The label (bar code, lot number, and so on), the supplying procedures, the reconstruction of the lot history and the registration systems are the most important instruments which allow the traceability of materials/products and the conformity of the data.
The food production chain is the sum of subjects (organizations) and of the material flow (raw material, additives, semi finished products, packaging) which contribute to the creation, distribution, commercialization and supplying of the product. Therefore, this is a project which connects the hypermarkets/supermarkets and the distribution in general with the transformation and transport companies and the companies producing raw materials.
Since Regulation n. 178 has been introduced (2005), the Organizations of all level are working to develop and to make easier the internal (reconstruction of the lot history) and external (consumers that received the products and raw material suppliers) traceability system.

Furthermore, now it is possible to certificate the traceability through two main schemes:

  • Certification of food production chain traceability
  • Certification of controlled food production chain

The certification of food production traceability aims to document the history of a product and the specific responsibilities thanks to the identification and the registration of the material flow and of the organizations which produce, commercialize and supply the products.
The certification of controlled food production chain demonstrates to costumers/consumers the ability of the Organization to guarantee the safety of products thanks to the application of the HACCP procedures in the whole production, beginning from the farm till the distribution.
Chelab, in collaboration with Chelab Servizi, is able to develop for the agribusiness companies a FOOD PRODUCTION CHAIN TRACEABILITY SYSTEM in accordance with the European Regulation and the indications reported in the norm UNI 10939 (April 2001): the system certificates the product history, through the individuation and the registration of the material flows and of the operators that have contributed to the creation and supplying of the product.

The service consists of different phases:
  • Assistance for the development of a traceability system in accordance with the Regulation n. 178, including:
    • identification of the involved organizations
    • determination of the involved material flows
    • improvement of the documents of working system (procedures, working instructions, models)
    • sensitization and training of the staff involved in the traceability system
    • Updating of the company self-control plan with care to the sampling and analysis plan to control the chemical, physical and microbiological parameters
  • Assistance for the certification of the traceability system according to the norm UNI 10939, including:
    • Preparation of chain traceability Manual
    • identification of the most important products or components for the products which have to be certificated
    • execution of inspecting verifications and re-examinations to evaluate the efficacy of the developed system
    • assistance during the audits of the certificating company
